Menu Time 3.19.11

Now that life will be [slightly] calmer for the next couple of weeks, it's time for me to start planning some meals again!  Krew and I will be heading to the store together tonight while Dave is at an NC State soccer alumni event.  (If he was going to be playing, which he almost was, I was SO going to be there because, frankly, I find the attribute "soccer player" to be super duper attractive.  But only when it applies to my hubby anymore, of course. :)  But, alas, he's not playing, so I decided getting stuff done would be more beneficial.)

So here are my ideas for the coming week:

*Creamy Chicken and Rice (new recipe)
*Tortellini and peas (see below)
*Tuna melt (see below)

And since the second two meals are supposed to be incredibly easy (that's why I like them!) I thought I'd share the recipes:

Tortellini and peas:
Cook one package of frozen cheese tortellini according to the package directions. Meanwhile, place 2 cups frozen baby peas in a colander and drain the cooked tortellini over the peas. Return to saucepan and add a few tablespoons of butter and some Parmesan cheese. Cook and stir until the peas are heated and the cheese is melted.

Tuna melt:
Toast split English muffins. Combine drained canned tuna with a bit of ranch salad dressing, sour cream, and chopped celery and place on muffins. Top with tomato slices and sliced muenster or Havarti cheese. Broil until cheese melts.
